Preparation Instructions: Suggested Handling: Small Batch: Place 10 lbs. mix in bowl and add 3 lbs. 6 oz. cold water. Mix 2 minutes in low speed. Add 1 lb. 10 oz. cold water to 1st stage, mix over 1 minute at low speed. Scrape bowl and paddle, then mix 2 minutes in low speed. Drop in greased muffin tin or cupcake papers. Bake 20 minutes at 380° F. Large Batch: Place 50 lbs. mix in bowl and add 17 lbs. cold water. Mix 2 minutes in low speed. Add 8 lbs. cold water to 1st stage, Mix over 1 minute at low speed.
