Mafaldine belong to the long, curled dried pasta family and arecharacterised by the shape of a ribbon curled on both sides. Also called'Reginette' or 'Reginelle', they are of Neapolitan origin and were oncecalled 'Fettuccelle Ricce'. They were later dedicated by the Neapolitansto Princess Mafalda of Savoy and renamed Reginette or Mafaldine, in herhonour.Curled pastas, like Mafaldine, once cooked, have a characteristicand irregular consistency that differs between the smooth and curled partsof the format. Another particularity of this format is the greater ability ofthe curled part to retain the sauce compared to the smooth part. It is arather versatile format, so the recommended condiments for Mafaldine are:Neapolitan ragù with ricotta cheese, game sauces, fish sauces with shellfishand seafood or white sauces prepared with soft cheeses and the addition ofcurry, saffron, horseradish or ginger.
