In Mexico, corn smut is highly esteemed as a delicacy, where it is known as huitlacoche. Its earthy flavor pairs well with chicken and beef, in quesadillas or sauces - the same places you would add mushrooms. Once open, frozen huitlacoche will keep in the refrigerator a few weeks.
