The Baldor collection is exclusive to Baldor on the East Coast and offers beef you cannot get anywhere else: high-plains cattle with superior genetics; USDA Prime and Upper Choice cuts for the best marbling, tenderness, and flavor; and single-source processing for consistency and safety assurance. The Export Rib is a preferred, cost-effective choice for steakhouses and for butchers who dry age their own beef. This cut comes with the rib bones attached which protects the meat during the cooking process. Individual steaks can be cut with the bone for a dramatic presentation.
