The DemKota Heritage Elite collection is exclusive to Baldor on the East Coast and offers beef you cannot get anywhere else: high-plains cattle with superior genetics; USDA Prime and Upper Choice cuts for the best marbling, tenderness, and flavor; and single-source processing for consistency and safety assurance. Outside skirt steaks, which hail from the diaphragm, are thin, tender, and more desirable than the tougher inside skirt. Because this cut is so thin, it benefits from a marinade and a quick cook over high heat.

Processing & Shipping
Orders placed before 4:30 PM Eastern on Friday through Sunday ship on Monday.
Orders placed after 4:30 PM Eastern on Sunday ship on Tuesday.
Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
