Niman partners with small, family-run farms for their proteins. This is pasture-raised, 100% grass-fed and grass-finished Angus Beef, raised humanely and with sustainable practices. The flank, which comes from the abdominal area of the cow, is thicker and wider than the skirt (which its often compared to), and benefits from the same treatment: a marinade or dry rub and a quick high-heat sear. Almost the entire piece is usable, making flank a high yield cut, chef-friendly cut.

Orders placed before 4:30 PM Eastern on Friday through Sunday ship on Monday.
Orders placed after 4:30 PM Eastern on Sunday ship on Tuesday.
Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
