For over 100 years, Gundagai Lamb in Australia has produced stunning, pasture-raised lamb responsibly and sustainably. To make sure all their lamb has beautiful marbling, with the perfect balance of lean meat and intramuscular fat, the team uses their own discriminating grading scale. The lamb tenderloin, which is found in the center of the animal, near the ribs, is beautifully tender, and rich and minerally in flavor. Like beef tenderloin, it is best seared whole, and finished in the oven, then sliced after resting.

Orders placed before 4:30 PM Eastern on Friday through Sunday ship on Monday.
Orders placed after 4:30 PM Eastern on Sunday ship on Tuesday.
Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
