Ours is milk-fed and grass-finished, and the racks have a small, uniformly-sized eye. The flavor of New Zealand lamb is very mild, not gamey at all. The smaller sizing of these racks make them the ideal rack-for-one and are optimal for cocktail chops. You can sear these off in a skillet to crust the outside, then finish in a hot oven for quick service.
