To make sure all their lamb has beautiful marbling, with the perfect balance of lean meat and intramuscular fat, the team uses their own discriminating grading scale. These frenched lamb racks are small and uniform, making quick, accurate cooking easy. Trimmed into individual chops, theyre an ideal appetizer; seared and roasted whole, the racks are a perfect main course.

Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
