And last but not least, their chicken is air-chilled instead of being cooled in a water bath, so the skin gets super crispy. Airline chicken (also known as the Statler or Frenched breast) is a cut that includes both the breast and the wing bone. This classic, fancier presentation offers maximum flavor and ample skin that crisps and keeps the meat underneath moist.

Larger bulk orders may ship in insulated Styrofoam containers for added protection.
