Founded by Kevin Ouzts in 2009, The Spotted Trotter in Atlanta focuses on humanely sourced proteins, sustainable ingredients, and crafting high-end, Southern-style charcuterie. Nduja is a smoky, slightly spicy, soft salami, made from the jowl, shoulder, and pork belly. It can be cooked, added to marinara sauces, stews, or dolloping onto pizza, or served as is on charcuterie platters or spread on bread.
