Fresh deboned hams are infused with curing and flavoring solutions through injection, massaging, and tumbling to ensure even distribution. After being formed in a mold, the hams are cooked to 156°F, chilled to 45°F within 15 hours, vacuum packaged, briefly heated, and chilled again before being stored at 39°F for optimal quality and freshness. Processing & Shipping
Orders placed before 4:30 PM Eastern on Friday through Sunday ship on Monday.
Orders placed after 4:30 PM Eastern on Sunday ship on Tuesday.
Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
