Willoughby is an original creation of Marisa Mauro’s Ploughgate Creamery, a Cellars collaborator that ceased production of the cheese after a creamery fire in 2011. With Marisa’s blessing we resurrected this pudgy little washed-rind and have continued to develop the recipe at Jasper Hill Creamery. This succulent and buttery washed-rind cheese has aromas of peat, roasted beef and onions – a strong and complex front for the subtle milky, herbal, ripe-peach flavors within. Willoughby has a thin, tender, rosy-orange rind, which adds earthy dimension to the texture and flavors of the gooey interior. View Item Spec Sheet

Orders placed before 4:30 PM Eastern on Friday through Sunday ship on Monday.
Orders placed after 4:30 PM Eastern on Sunday ship on Tuesday.
Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
