This cured sausage has a singular juiciness and delicate flavor, seasoned with a small amount of nutmeg, black and white pepper. It's produced with artissanal methods in La Alberca Spain in a natural reserve. The term "Longanzia" refers to its long slender shape. It should be enjoyed with minimal other distractions: try it sliced thinly with a glass of crisp white wine.
