With the addition of salt (hence, “salata”), two months of age, and some pressing, ricotta loses moisture and becomes crumbly. Ricotta Salata maintains a unique freshness, perhaps that milky quality of ricotta, but changes in texture, becoming dry and spongy, almost like an aged feta. - 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
