Called Ricotta di Pecora in Italy, this fluffy ricotta is very different from cow&#39;s milk ricotta. You&#39;ll notice the characteristic sheep&#39;s milk tang with an underlying subtle sweetness. Great with fresh fruit, pasta and greens, or pureed with fresh herbs to serve as a dip. Ricotta di Pecora is surprisingly tasty sprinkled with cinnamon and spread on toast for breakfast, or drizzled with honey for dessert.
