Cabrales is a bold, traditional blue cheese from the rugged mountains of Asturias in northern Spain. Made from raw cows milk or a blend of cow, sheep, and goats milk depending on the season its aged in natural limestone caves, where the cool, humid environment allows Penicillium mold to develop naturally, creating its signature blue-green veining.The flavor is intensely piquant, salty, and complex, with earthy and slightly spicy undertones that deepen as it matures. The texture ranges from creamy to crumbly, depending on age and milk mix.Cabrales is a true expression of its terroir rustic, assertive, and beloved by blue cheese enthusiasts. It pairs beautifully with Spanish ciders, robust reds, or sweet dessert wines like Pedro Ximénez sherry.

Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs. 

Larger bulk orders may ship in insulated Styrofoam containers for added protection.

All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
