The Baldor collection is exclusive to Baldor on the East Coast and offers beef you cannot get anywhere else: high-plains cattle with superior genetics; USDA Prime and Upper Choice cuts for the best marbling, tenderness, and flavor; and single-source processing for consistency and safety assurance. A PSMO (Peeled, Side Muscle On) tenderloin is a great option for roasting whole or portioning into filet mignon. Tenderloin is buttery soft and extra flavorful thanks to where it sits on the animal: beneath the ribs, next to the backbone.
