Niman partners with small, family-run farms for their proteins. This is pasture-raised, 100% grass-fed and grass-finished Angus Beef, raised humanely and with sustainable practices. Niman sends us true, bone-in chuck short ribs. Because these come from the chuck primal, which lives between the neck and ribs, the meat contains substantial connective tissue, yielding rich texture and beefy flavor, once slow-cooked. As opposed to ribs taken from the plate section, theyre great for slow braising, offering both good value and a generous yield.
