Niman sends us true, bone-in chuck short ribs. Because these come from the chuck primal, which lives between the neck and ribs, the meat contains substantial connective tissue, yielding rich texture and beefy flavor, once slow-cooked. As opposed to ribs taken from the plate section, theyre great for slow braising, offering both good value and a generous yield.

Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
