After extensive research, carefully selected Spanish Iberian hogs were bred with Nimans prized Duroc sows for a first-of-its-kind innovation. This results in pork with exclusive, American genetics and high proportions of intramuscular fat, meaning major marbling, beautiful coloring, and deep flavor. The belly is exceptional for transforming into house-made bacon, sliced and seared until crispy, or cubed and braised.

Processing & Shipping
Orders placed before 4:30 PM Eastern on Friday through Sunday ship on Monday.
Orders placed after 4:30 PM Eastern on Sunday ship on Tuesday.
Orders ship on the following schedule:
- Next Day Air (perishable Only): Monday – Thursday
- 2nd Day Air: Monday – Wednesday
- Ground (Dry Goods Only): Monday – Friday
Fresh and frozen items ship via expedited air service (1–2 Day Air) and are packed in ClimaCell insulated containers with plant-based ice packs.
Larger bulk orders may ship in insulated Styrofoam containers for added protection.
All perishable products are sourced from USDA and FDA inspected facilities and handled according to strict food safety standards.
